Iloilo: A Gastronomic Food Journey

Nestled in the island of Panay, Iloilo City has been known throughout the country for its beautiful culture, scenic spots, and most importantly, its food, which recently earned it a UNESCO Creative City Of Gastronomy Award, solidifying its status as a culinary paradise of the country.

With various ties to Spanish, Chinese, and Filipino traditions, it is without doubt that Iloilo is a melting pot of flavors, such as the sought-after "Inasal" –a skewered, marinated chicken that is grilled and served typically with rice– is surely a must try for every visitor that comes. Being the first in the country, the city has been vying for the award for two years and has upped its efforts this year with various food-related initiatives, including a cookbook, titled “Flavors Of Iloilo.”

The city embraces a farm-to-table philosophy that encourages the use of locally sourced produce. The philosophy is widely supported by the community with restaurants and eateries following the movement. It also supports both the farmers and the buyers alike as not only is it environmentally friendly but also allows flavors to be fresher and cleaner for anyone to eat. 

Becoming a recipient of the award also entails various responsibilities, one of which is to collaborate with UNESCO's Creative Cities Network members to "strengthen their resilience" against threats of climate change, rising inequality, and rapid urbanization. UNESCO Director-General Audrey Azoulay said in a press release, "the cities in our Creative Cities Network are leading the way when it comes to enhancing access to culture and galvanizing the power of creativity for urban resilience and development."

Their journey to becoming an awardee is a testament to the unyielding commitment they have to preserving culture, heritage, and art, symbolizing as a shining example of how cuisine can be used to elevate the way of living. It promises a bright future for the city that paves the way for international recognition, increased tourism, and economic growth. 

Iloilo shines as an example of a city that celebrates and elevates their gastronomic journey. The well-deserved recognition ensures that the world will continue to savor the flavors of this enchanting city for generations to come.
